I've been a strict ovo-lacto vegetarian for 20 years now! Wow. I don't feel old enough to have done anything for 20 years. :) But I was 14 when I decided to become vegetarian, so that's about right.

The hardest thing I have a problem with is eating too many carbs, which are bad for me because I have insulin resistance and a metabolic condition. I should be sticking to things like tofu, beans, vegetables, etc, but man, I love my carbs!

I was also vegetarian all throughout my pregnancy, through breastfeeding, and am raising my son vegetarian. He loves his veggies so much that if I give him a plate with pizza and a big bowl of plain steamed broccoli and zucchini, he will eat the veggies before he even touches the pizza! I was so shocked and happily surprised to see him do this.

Part of the key to getting kids to eat veggies is to prepare them correctly. When I was a kid, my parents overcooked things so much they often tasted awful. Asparagus, for example, gets really stringy and bitter if overcooked.

Sweet potatoes are one good thing to try with kids. Throw them in the oven on 350 and bake for an hour or two, then keep them in the fridge to reheat later. My son also really loves zucchini, but you need to buy it and cook it fresh, otherwise it can get a really bad bitter taste.

One of my fave veggie restaurants in Portland is the Blossoming Lotus, a vegan restaurant in the Pearl district. Most Portland restaurants have vegetarian options though. I also really used to like the Red and Black Cafe on Division, but I think they moved to N/NE Portland, which I should frequent more often than I do.

I am not a very good vegetarian (I have espresso in the morning and often just end up snacking through the day). So the easily accessible protein is nice. I stopped eating soy (not good for my thyroid). It is only a little and only in other foods, I sort of make myself eat it, especially in the beginning. I get anemic often, my natropath told me the iron from an animal is absorbed better by the body (and chicken was the only thing I could imagine trying). Protein, iron, convenience, and variety.

Funny Sharon. My son says he wants to be a vegetarian, but still eat bacon. So he calls himself a bacatarian! :)
I'm curious though-after 19 years, why would you start eating anything not vegetarian? I've been veg for about that long and I can't imagine ever eating it again.

Right, it's just hard to get used to, because I have been a strict vegetarian for 19 years with just the past year or so eating chicken, and I really can only take a few bites and am very picky about the chicken. Oh well, since it is poultry I guess I can still say I don't eat meat, because I really don't. It's nice to have a simple one word thing to call myself because it makes for a more polite way to refuse meat. Chicketarian. : )

Sharon, that's about it. Do you only eat chicken and no other meat? That could be a good step. I would say a vegetarian doesn't eat anything with a face (for me it's another organism that was once alive-including seafood and poultry). And a vegan goes the extra step with having no dairy or animal products. If you do eat meat, you are neither. :)

Would the kiddo afraid of Veggies be more into them if they got to pick them out? The Farmer's Market is always a favorite stop on Sunday mornings for us.
I am super lucky in that my son LOVES veggies. Also used to have a yard and he always was a part of planting and tending the garden.
Now we do what we can on our deck in pots.
Just ideas, maybe you already have done all that. :O)

Thanks Jody, great advice to places to go in Seattle. I am dabbling into the idea of becoming vegetarian with two kids, one veg friendly, the other deathly afraid of them. So struggles abound. Hoping to find advice into easy entry into becoming veg.

does any one know about the growing practices of soy? I know of one place here, I think on Vashon Wa, that grows organic, but how and what do we know about others?
